  • 1 rack of lamb (about 8 bones, frenched)

  • 2 tablespoons olive oil

  • 1 tablespoon Dijon mustard

  • 3 cloves garlic, minced

  • 1 tablespoon fresh rosemary, finely chopped

  • 1 tablespoon fresh thyme, finely chopped

  • 1 tablespoon fresh parsley, finely chopped

  • 1/2 cup breadcrumbs (preferably panko)

  • 2 tablespoons grated Parmesan cheese

  • Salt and pepper to taste

  • 1 tablespoon unsalted butter (for roasting)

Instructions

  1. To prepare the lamb, preheat your oven to 400°F.

  2. Pat the rack of lamb dry with paper towels, then season generously with salt and pepper. Rub the lamb with olive oil, coating it evenly on all sides.

  3. Brush a thin layer of Dijon mustard over the lamb for an extra layer of flavor.

  4. Mix the garlic, rosemary, thyme, parsley, breadcrumbs, and parmesan in a small bowl to prepare the Herb Crust. Add a pinch of salt and pepper.

  5. Press the herb mixture onto the fat side of the lamb, making sure it's evenly coated. Gently press the breadcrumbs into the mustard to create a solid crust.

  6. Roast the lamb by placing the lamb on a roasting rack in a shallow pan and dot the top with butter for added richness.

  7. Roast the lamb for 20-25 minutes for medium-rare, or 30 minutes for medium, depending on your preferred level of doneness. Use a meat thermometer to ensure accuracy:

    1. Medium-rare: 125°F

    2. Medium: 135°F

    3. Well-done: 145°F

  8. Let the lamb rest for 5-10 minutes before slicing between the ribs into individual chops.

  9. Arrange the lamb chops on a platter and serve with your favorite sides, such as roasted vegetables or mashed potatoes. Pair with a bold red wine to complement the rich flavors of the lamb.
