Ingredients

  • 1/2 cup vegetable oil

  • 1/2 cup flour (for the roux)

  • 1 onion, finely chopped

  • 1 bell pepper, chopped

  • 2 celery stalks, chopped

  • 4 garlic cloves, minced

  • 1 can (14 oz) diced tomatoes

  • 6 cups chicken broth (or seafood stock for a richer flavor)

  • 2 bay leaves

  • 1 tsp thyme

  • 1/2 tsp cayenne pepper (adjust for heat preference)

  • 1 tsp paprika

  • 1 tsp Worcestershire sauce

  • Salt and pepper to taste

  • 1 lb shrimp, peeled and deveined

  • 1/4 cup parsley, chopped (for garnish)

  • 1-2 tbsp hot sauce (optional)

  • Cooked white rice for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Slowly whisk in the flour, stirring constantly. Cook for about 10 minutes or until the roux turns a deep, golden brown. This step is essential for developing the rich, nutty flavor that forms the base of your gumbo.

  2. Add the chopped onion, bell pepper, and celery to the roux. Stir and sauté for about 5 minutes, until the vegetables begin to soften.

  3.  Add the minced garlic and cook for another 30 seconds, letting it release its fragrant aroma.

  4. Stir in the diced tomatoes (with their juice), chicken broth (or seafood stock), bay leaves, thyme, cayenne pepper, paprika, Worcestershire sauce, salt, and pepper. Bring the mixture to a simmer. Reduce the heat and let it cook uncovered for 30-40 minutes, allowing the flavors to meld together.

  5. Stir in the peeled and deveined shrimp. Let them cook for about 5-7 minutes, or until they turn pink and firm up. Be careful not to overcook the shrimp, as they can become rubbery.

  6. Remove the gumbo from the heat and discard the bay leaves. Serve hot over a bed of freshly cooked rice. Garnish with chopped parsley and a drizzle of hot sauce if you like a little extra heat.
