Although fried chicken isn't the typical breakfast choice, who could resist the combination of crispy fried chicken and fluffy waffles? Chicken and waffles is a dish that can be enjoyed any time of day, whether you're having it for breakfast, lunch, or dinner. It's hearty, comforting, and delicious!

Ingredients:

For the Fried Chicken:

  • 4 boneless skinless chicken breasts  (chicken thighs will work too!) 

  • 1 cup cornstarch

  • 1 cup buttermilk

  • 1 egg

  • 1 1/2 cups all-purpose flour

  • 1 tsp garlic salt

  • 1 tsp paprika

  • 1/2 tsp black pepper

  • 1/2 tsp cayenne pepper

  • 1/2 tsp chili powder

  • 1 1/2 tsp baking powder

  • 1 tsp garlic powder

  • 1/3 cup buttermilk (for the flour mixture)

  • Oil (for frying)

For the Waffles:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tbsp sugar

  • 1/2 tsp salt

  • 1 1/2 cups buttermilk

  • 1/3 cup vegetable oil

  • 2 eggs

  • 1 tsp vanilla extract

  • Butter and syrup (for serving)

Instructions:

  1. Set up three containers for breading: in the first, add cornstarch; in the second, whisk together one egg and 1 cup buttermilk; in the third, combine flour, garlic salt, paprika, pepper, cayenne pepper, chili powder, baking powder, garlic powder, and 1/3 cup of buttermilk. Mix well to form crumbles.

  2. Dip each chicken breast into the cornstarch, then into the egg mixture, and finally coat in the flour mixture. Set aside on a baking sheet until ready to fry.

  3. Heat enough oil in a large skillet to cover the chicken pieces, about 2 inches deep, over medium heat.

  4. Fry the chicken, one or two pieces at a time, for about 5 minutes on each side or until golden brown and fully cooked. Remove and drain on a paper towel.

  5. Preheat your waffle iron.

  6. In a large bowl, mix together flour, baking powder, sugar, and salt. In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla extract.

  7. Pour the wet ingredients into the dry ingredients and mix until smooth.

  8. Cook the waffle batter in the waffle iron according to the manufacturer’s instructions, usually for about 3-5 minutes, until golden and crisp.

  9. Place the waffles on a plate, top with a piece of crispy fried chicken, and drizzle with warm syrup and a pat of butter
